I used to be able to sculpt really well so I was thinking of trying my hand at carving a head from a foam rubber block, but I have no clue where to start. Any suggestions on a type of foam rubber to get, and the tools to do the carving?

There's some info on here about foam. You can use an electric knife, exacto knife, etc.

In my opinion any foam you can easily find in block form should work for you. We have in the past glued sheets of foam into a block but you get kind of an ugly seams on your finished product. If you cover it that is not a problem.

Electric knife is the best thing to use and they are cheap. If you do a lot of carving in foam they eventually seem to burn out but since they don't cost much it is not big deal.  A variety of scissors are also a great tool to have once you start refining things. We actually used sanding heads on Dremals to sculpt with also but you have to be really careful with this. It is very easy to get the foam caught in the spinning head and it tears up your foam not to mention throwing it across the room. Use a really light touch when you carve with a Dremal sanding head. Fine grit is the best. Practice on scraps first and experiment even with some of the different heads. I've used some of the cutting wheels to shape things also.

You can also do some cutting with a band saw.

Yep that would be the same types of foam I use. For carving I would use this one. http://www.efoam.co.uk/Srectangle.php

When I talk about EVA foam it is the same as this foam. http://www.efoam.co.uk/closed-cell-polyethylene.php This is the one I like for larger work like on body characters or larger puppets.
