Guess who learned to hand stitch tonight? (thank you, Youtube!)
His beak is now fully secured and feels quite solid! Thanks for the advice.
You can see his body a bit better in these images. I think the two-toned look worked out quite well, even if it was improvised at the last minute due to a lack of fabric!
He has quite a few more seams than I originally envisioned, even one running down his spine! That is because between two old jackets, I didn't have a single unbroken surface that was large enough for the pattern. I wound up having to break the pattern up into sections.
The two panels of his back were the sleeves of the second jacket, cut into flat pieces and sewn together. And the hands are separate pieces, as well. His body is comprised of 9 pieces of fabric! I didn't use any of the original jacket seams.
I haven't yet secured the foam body to the fabric. Any advice on that front would be appreciated.

Congrats on learning to hand stitch. While the machine is always my first choice sometimes you just can't go that route. 
I like the two tone look. It works well for this guy.

I got started on making the eyes tonight! I halved a styrofoam ball to make the eyes and covered them with felt using a spray adhesive.
I used scraps from the body and beak for the eyelids. I went with the lighter grey for a bit of contrast. I'm pretty please with the results.
