Everyone may feel different about this but I generally use a Singer yellow band needle #14. This works well on generally antron or polar fleece. I might add that fleece will dull your needles and scissors after a period of time. Much quicker that other fabrics.
As for thread I use to use a standard polyester thread............. use a good brand,and make sure it is not old. Over the years I have switched to using clear monofilament thread............ this way I can sew on any color with out changing thread. I use a size.005 or .006 Monofilimant.
You can find all type of info about the different threads from the Thread exchange below.

elvis*vent,
You failed to mention if you where going to be sewing on a machine or by hand. The needle Billy mentioned is for a sewing machine and I agree with him that a #14 is ideal. There are ball point and sharp point needles. Ball point needles are used with knit fabrics, including double knits spandex, tricots and medium weight elastics. I think as a rule you would want to stick with a ballpoint needle when sewing fleece. Sharp point needles are normally used for tighter weave fabrics. There is also a needle used for leather that has a "tricornered" point of sorts.
There is a good overview of this subject over at Sewing Needle - Wikipedia.

I generally just use whatever needle I find since I have a tendency to lose them >_<;
I've gotten good results so far but I prefer using small-medium sized needles if I can.
I also machien stitch antron fleece and have gotten great results as well.
Sorry if I'm not much help and good luck!
