Here you go... i'm going for a long narrow head look so was thinking I want the same type of ears and nose.  Be warned this is a first puppet and still is far from done.

Gav,

Do you want a Muppet style long nose (almost like a capsule shape) or more rigid Human like nose?

Muppet nose and yeah thanks puppet lady.  Even though I don't think that one fits with what I'm trying to do.  I'll use it with a future puppet for sure.

You can take the same method that PuppetLady demonstrated and get many different shapes of noses simply by altering the starting shape of the fabric.   Then when you gather your thread you take care to retain the shape.  Give it at try! Cut a long oval shape or triangle and use the same basic steps.  When you get to the cross stitching go from right to left on the bridge of the nose and then when you get down to the "bulb" of the nose switch to the cross stitching the way PuppetLady did it.

Great Shawn answered your question.

For the ears I would start drawing different designs on paper and see what looks best for you by pinning them on and see what jolts your fancy.  Once you figure it out just transfer that to the fleece making sure you add a 1/4 inch around the shape for sewing purposes.  If you have a machine zip it through if not then hand sew them leave the area that attaches to the head  open so you can lightly stuff if you want.  If not then sew those babies on.

As a little suggestion try pinning everything on before you glue them on, it is important to make sure the face looks balance before permanence.  I always pin until I have everything on the face then I decide to change, take away or keep as is.  Once you are happy with the overall look, then glue or sew the pieces on.  Just a little hint, it just seems that you are adding things one piece at a time you might paint yourself in a corner and be disappointed at the end result.
 
BTW your puppet looks great I would never guess that it was your first one until you told me.  You are doing great and be proud of the work that you did.

Thanks stigman.. Yeah if it wasn't for these forums it wouldn't have come out so good.  I owe allot to you guys for all the help.  I just did allot of test noses.  Whats funny is in the end the button nose looked best so I figure i'll stay with that one.  Good advice on how to test different types of noses and ears.  I'll do that while working on the ears.

Here is a drawing of how I did my puppet Timmie's ears. I wired them so I could bend them in different shapes to give his face different expressions. If you have any questions just let me know.
